Day 5/10 without grocery shopping- the potluck

There was a wellness potluck at work today and I did pretty good initially , stopped at cafeteria For 2 servings cauliflower and 1 serving Capri vegetables . At potluck started with a big plate of broccoli then someone made an excellent Korean fried rice with sesame oil , gluten free banana bread and something that I think was egg salad . Everything was going reasonably well until homegirl started walking around offering people fancy chocolate truffles . I refused at first but then caved, I had 2-3 truffles. Then I decided it was time to go back to work but after talking to the fellow I cane back and someone had taken the boxes of truffles from the potluck and to the resident lounge RIGHT NEXT to where I was sitting. I probably had 7-8 chocolate truffles during the day, in addition to the fried rice , barbecue chips , banana bread .

Also ate some fuego peanuts and a small bag of sweet tart ropes that was 360 calories if j recall correctly.

Also probably had about 4 kiwis

After working out , had sushi and half a lb of strawberries

Day 3/10 without grocery shopping

I forgot to take a picture of the waffle this morning . Just one vans waffle with almond butter and maple syrup and blueberries

The good news is that for lunch I had three servings of collard greens which I did not know r a sulfur rich vegetable so I was pleasantly surprised by how good I felt after I ate them. I was stressed because I was getting tired of eating cauliflower and broccoli all the time but now I know better 🙂

The bad news is that I also ate a half a bag of toffee peanuts which I forgot have milk 😦 I knew I was messing up with the sugar but the milk was an accident :(. One of the bosses had a bag oh his desk so I decided to go guy one too along with a mango madness baked juice

100# did not finish all this salad , particularly the broccoli bc I found out about collard greens counting as sulfur vegetables


Lessons learned for tomorrow:
1. Collard gteens
2. Anything that says ‘toffee’ or ‘butterscotch’ is off limits
3. The more full I am on good foods the less I want bad foods
4. Sugar addiction is a demon that needs to be banished

10 days without grocery shopping due to an insufferable work schedule, 2/10

Zwfff was a significantly better day. I’m still trying to wean myself off the steroids I took to get through my recent trip to the Dominican Republic, but My energy levels are getting better and I’m definitely decreasing the daily required number of pills.

Made a Vans waffle sandwich with blueberries and almond butter sandwich for q and me this am

Morning tea includes two cups of tea and some pineapple and grapes from the cafeteria . Going to pee before an emergency happens ! 🙂

I feel conspicuous to be eating 1.5 lbs of salad greens while other people are sometimes eating sandwiches, cookies and chips during a meeting, but it feels so good !

I did find some Corn tortilla chips and hummus which added to my glycemic load a bit 😦
These almond milk pudding and cashewgurt cups have been my Achilles heel with all their added sugar

One more thing , today is Mardi Gras and Q wants to do something to indulge . Fingers crossed we re going to keep it mostly healthy xP

10 days without grocery shopping because of work, maintaining 9 cups a day – Day 1

Dr Terry Wahls recommends 9 cups of fruits and vegetables a day on level one of her Wahls Protocol that has noticeably decreased my inflammation levels.

Im starting 10 days without a break off at work so I won’t have time to go shopping for a couple weeks . Loaded up on storable goods at Whole Foods and now am trying to get my 9 cups from the hospital cafeteria salad bar accompanied by a can of freshe tuna (source of omega 3s) and paleo valley honey mustard salad dressing

Spinach bacon saute and insta pot wings :) Recovery meals today

Today we will be making instapot chicken wings and some beef bacon spinach sauté. Due to a miscommunication with Q, we now have 2 extra pounds of spinach in the fridge that needs to be used today or it will spoil. Using beef bacon due to my puritanical upbringing 🙂

Spinach bacon satuw

Recipe adapted from Martha Stewart tecipe

Ingredients

1. 4 pieces beef bacon without nitrites

2. 2 pounds of spinach your fiancé bought by mistake

3. 2 table spoons white cinegar

Instructiojs

1. Sauté bacon to desired degree of burnt. Set bacon aside, keep fat in pan

2. Add spinach and cook those leaves down !!

3. Add vinegar and salt and pepper to taste

4. Eat

disparities in social determinants of health – Dominican Republic

I just got back 2 days ago from a 2 week trip to the Dominican Republic with my job. While the grand finale of this trip was a terrible gastroenteritis that I am still slowly recovering for, overall it was beautiful and I am very grateful for the experience.

One thing that struck me as we toured health systems there was very the high prevalence of diabetes and metabolic syndrome. Due to historical and economic reasons, Dominican people traditionally eat a diet very high in starches – plantains, rice, beans, yame – and while very delicious this is obviously a diet with a very high glycemic load.

I will write more on this later, but I am continuously struck and disturbed by how the foods people can afford determine their health and life expectancies. Carbs are cheap, protein is expensive, unfortunately. There are some community programs that are teaching people in rural areas to farm chickens in order to raise their protein intake which I think is a very positive development.

I’m sure there are Dominican people who have access to very high quality diets, but we really didn’t spend much of the trip interacting with ‘rich’ Dominicans. If anyone is familiar with the healthier sides of Dominican fare please feel free to educate us in the comments 🙂

Since eating a starch diet for the last 2 weeks I have been feeling pretty crummy, and since I got back two nights ago and could barely walk am now making the road to recovery before I have to work a 10 day stretch starting tomorrow.
